In the right hands, with the right blend of herbs and spices, and with the right okra ‘rules,’ you can create incredibly savory Massala. Okra is a vegetable with edible green seed pods. It is delicious whether cooked alone or in combination with other vegetables and/or meat, such as moist, thick and juicy lamb chops. Sometimes Okra will test your patience, and at times it can be a little temperamental, but don’t let this veggie get away with it! Maintain your confidence and control, and your okra will behave and your results is a delightful dish.
